RECIPE FOR VALENTINE’S LEMON BISCUITS
Ingredients:
125g butter at room temperature
75g caster sugar
1 egg yolk
1 lemon, zested
200g plain flour
Icing and sprinkles to decorate
Method:
Preheat oven to 190?C/Gas 5. Cream the butter and sugar with a wooden spoon until smooth, then beat in the egg yolk and lemon zest. Sift in the flour and mix to a dough. Wrap in cling film and refrigerate for 30 mins.
On a lightly floured surface, roll the dough to about the thickness of a pound coin, and stamp out shapes with a cutter. Re-roll and cut any leftover scraps. Place the cookies on a large baking tray and bake for 10-12 mins until golden. Cool on a wire rack before decorating.
